This is organic Chablis from one of the most important and high quality producers in the village of Chablis. It is crisp and refreshing, but with a delicious depth and concentration of white-fleshed fruit flavours, balanced by a mineral structure that makes it a versatile wine that is excellent with many dishes.
William Fevre is an historic estate with its property located right at the heart and centre of the town of Chablis and access to the best vineyard sites in the appellation. Outstanding vineyard management lead to them becoming one of the first producers to outwardly claim their organic credentials. Not that they should be judged solely on that: it's the quality of fruit and the subsequant wines that they make which is the proof in their rather exquisite pudding.
