The Reserva Brut is made from the blend of the three most important indigenous grapes that are the most representative of the estate.
A blend of Parellada 30%, Xarel.lo 40% and Macabeo 30%. The grapes are harvested by hand and whole-pressed. The must is fermented at low temperatures to preserve the freshest aromas. The base wines are bottled at the beginning of the year and the bottles are placed in the ageing cellar, where, at constant temperature and humidity, in the dark, they will rest for more than 18 months. Once the ageing time is over, they riddle the bottles and disgorge to remove the wine lees, add the Brut dosage and cork each Reserva Brut bottle with the definitive cork.
